Great idea. I love shawarma and I always buy it but I thought you needed that big spinny roast thing for it to be authentic 😹

Cooking thighs is clutch. My mom-in-law (whom I adore) wrote down a bunch of her recipes and collected recipes for food that we like and put them into a little wedding cookbook. I use a grate and the broiler and it tastes great

Yup, I just looked into it. The cut of meat can make all the difference. The grate and broiler is a good idea too.
