Be careful! Once a cucumber has yellowed it signals to the plant that it’s time to die! I would only do this at the end of the season after you picked all of the eating ones!

Not exactly true, you can harvest almost yellow cucumbers and leave them on a sunny spot next to a window and they will turn yellow and the plant will be alright if the conditions are still good :)
