Can any LP experts clarify this for us: When you add single sided Uni-V3 liquidity, and then withdraw that liquidity while price is in range, do you just receive the single sided liquidity + interest from swaps or would you receive an equal weighting of both tokens from the pool?

If it is in range it is by definition no longer single sided. The weight of tokens you get when you withdraw depends on where the price is. You can always see the % of each token when viewing the position on Uni

really what we are wondering is if its possible to 'exit' a token position by adding single sided liquidity positions then removing liquidity and it seems as though the answer is, under certain situations, yes

Yea, I do this all of the time. It's how I exit most airdrops and memecoins. Enter under the range and exit when it goes above my range.
