Can any LP experts clarify this for us: When you add single sided Uni-V3 liquidity, and then withdraw that liquidity while price is in range, do you just receive the single sided liquidity + interest from swaps or would you receive an equal weighting of both tokens from the pool?

If it is in range it is by definition no longer single sided. The weight of tokens you get when you withdraw depends on where the price is. You can always see the % of each token when viewing the position on Uni

You can't add single sided liquidity in range. The range for single sided liquidity must be either above or below the current price. If you add single-sided liquidity for a token A you are trying to exit into token B, and then the price moves within your range, part of your tokens A will be converted in token B. 1/2
