I make this minestrone soup recipe to use up all the vegetables we have. 

Sautee
.5 onion
2 garlic
2 carrots

Sautee
1 squash 
1 zucchini 

Add
2 c green beans
1 can kidney
1 can chickpea
1 can whole tomatoes then crushed
1 tbsp better than chicken bullion
2-4 cups water to cover everything

Bring to boil & simmer 15 mins

Do you have extra veggies kicking around in the fridge? Make your own version of @chicago minestrone. Canned tomatoes are magical.
