Some days I really feel like I'm getting the hang of baking

Other days I swear the neighbours must think I'm getting attacked with all the swearing and banging going on

The weather has been the biggest issue for me for sure, but largely have been having success for the most part which is great. 

Definitely agree that it's a science! Have been very reliant on my notebook to help as when it goes well I want to remember it 😅

Sometimes my yeast are dead and I don’t pay enough attention to them and I’ve had to redo a lot of dough. Sometimes the weather is bad, the humidity is bad, and I’m proofs are shot. 

I bake all the time when I’m not on the road and stuff goes wrong a lot. Baking is a science and the smallest things can throw your bake into chaos. Happens to professionals too!
