Black garlic is a product made by fermenting regular garlic in controlled heat and humidity. During this process, the garlic is kept for 50 to 90 days at a temperature of approximately 60 to 77 degrees Celsius. After that, the garlic becomes jelly-like, sweet in taste, and black in color.
