I always just mindlessly add 15-20%. So the whole "tipping incentivizes quality of service" argument has always seemed unrealistic to me.

Nope. In America it just became pure social pressure. It's not a tip if it's mandatory. In Europe, for example, if you tip, the attendant will show you how glad he , it has a real meaning.
