To get a jump start on spring harvests we transplant quite a few crops that are easily direct seeded. Difference being is the ground is still thawing out / frozen right now. So we can start transplants a few weeks before transplanting; in this case greens slated for a fieldhouse this week. Spinach is one of the cherished spring greens; we’ll grow bulkier full sized spinach with stems full of sugar - as it’s not worth competing with the meh baby spinach (aka veal spinach) that thrives on automation. Raw spinach may reduce nutrient absorption with its Oxalic acids; so it’s a win win, growing spinach intended to catch a bit of heat in a pan. These are Tarsier Spinach starts seeded Feb 4th, will be transplanted this Thursday. We’ll be seeding the first spinach tps for the field in the gh later this week. Then start successions every other week through early May before we take a break for summer to avoid heat, and pick back up with spinach rhythms in the fall.
