So far, still, the absolute best podcast interviewer I've found is Tim Ferris. The depth of research and questions and subsequent rawness of peoples' replies is unparalleled. Huge variety of guests, and the content probes into the most difficult questions; human condition

By a very large margin, this is one of the best "amateur" podcasts I've come across. https://gundampodcast.com/ It's very niche audience wise, but yeah, consistently good content, well researched, and human. Kinda ruined a lot of other podcasts for me when I realized how thin they were.
