Do you like eggplant? I hated eggplant before coming to Korea but now I can't get enough of it. There are so many good Korean eggplant recipes but this weekend I made Kaji Bokkeum (가지볶음) This recipe results in a crispy fried eggplant, topped with a spicy red pepper and plum "sauce".
