Kyiv Cake
The history of this cake began in 1956 at the Kyiv Confectionery Factory (now "Roshen"). According to legend, its creation was the result of a mistake when confectioners accidentally left egg whites for a sponge cake overnight, and they crystallized. Instead of throwing them away, the chefs decided to experiment โ and thus, the crispy meringue-nut layers, which became the cake's signature feature, were born.
The classic Kyiv Cake has two main flavors:
- Crispy nutty meringue layers (usually made with cashews or hazelnuts).
- "Charlotte" buttercream, made with condensed milk.
While not the oldest dish in Ukrainian cuisine, it has long become a part of it. Kyiv Cake is a symbol of the city, and for many tourists, it is a must-try gastronomic souvenir. 7 replies
