How about some NYC inspired pierogi even if I can’t be at Farcon. 

Chopped Cheese “Pierogi”

Beef patties, onion, American cheese seasoned with adobo then stuffed in adobo seasoned pierogi dough with lettuce, tomato and bodega sauce. 

Had to pivot and make them more into tacos than pierogi when constructing them but the flavor and idea is still there. 

Of course you have to pair with your favorite bag and tea to complete the experience.
