1.5 cups milk
3/4 cup sugar
1 cup peaches, puréed 
Dash of salt, vanilla, lemon

20 min in the machine, add peach purée

1/4 cup salt and 1/4 cup sugar in 3 cups water

I’ve never done a salt AND sugar brine with chicken. I’m fascinated. I do it with pork with salt and apple juice but I’m excited to try this.
