I had a food prep chef for a few years. Theyβd come into my home and prep a few meals for the week. One thing I learned from this experience is that I was not using enough salt in my own cooking. I was shocked at how fast they would go through a box of salt. Since then Iβve been intentional about adding more salt than I think is needed during cooking and everything has been tasting better, without tasting salty.

My chef used to always taste my food, look at my disapprovingly and tap his spoon on my cookware and that was code for more salt. He said Americas were terrified of salt and he was going to make me more scared of him that salt. It was terrified of the man. It worked. I go through a lot of salt.
