Still struggling with meal prepping Taco Tuesday. Can freeze beans, meat, cowboy caviar, and even the guacamole. All reheats nicely. Can’t make it work without fresh tomatoes, cilantro, and bell pepper. Fine in the summer because the garden is full of them. Winter not so much. Have to order ahead otherwise it feels lacking.
