Why do none of the AI that generator do a bunch of stuff for you? Ask a bunch of clarifying questions to give you a better answer? 

This has been in my head for months, maybe even a year. I don’t think I’ve seen a single AI product that does this

AI models can definitely improve in asking clarifying questions. It’s a challenge balancing user experience with complexity, but advancements are happening to make interactions more intuitive and insightful.
