how much space is left to reduce the development overhead of zkEmail? Like is it possible for developers to build it as easy as writing a web scraper some day? If so, what is the path to get there? What tech do we need to unlock?

I would say its fairly easy now. We have SDKs with: 

- EmailVerification circuit which verify email signature.
- ZK-Regex to generate circuits for extracting specific string from email body (even has a UI for this)

Combine them and you can generate proof of email from somone with selective disclosure of the content.
