So many apps!! I feel like I need to take some time to understand the benefits of them all. Also — hubs. Do I need one? Why or why not?

No need for a Hub. You can use an app (i.e. client) that connects to a Hub. Similar to email, you don't need to a run server to have an email address. You let Google run the mail servers for you while you use Gmail the app (i.e. client).
