Most people probably don’t realize that Burrata (in its true form) is actually day old mozzarella wrapped up in the current day’s mozzarella. It was a way for the Pugliese to avoid wasting food. Pretty sure it was before the southern tip of Italy was actually incorporated into the country and times were tough. Now, restaurants charge “foodies” $18-24 for this leftover cheese and moron millennials pay for it. Pro tip: you can make it at home for like $7.

we had these for lunch in kobe, japan yesterday. first time trying burrata and loved it. i didn't expect it to be room temperature but it really didn't matter after a few bites.
