I don't think is overly cautious, I would hate to have a big bridge failure this cycle. If the community thinks this a reasonable way to protect themselves then why not, I really like that we can do this.

Certainly. I do think Gnosis and Polygon need to actually have internal discussions about what to do with their primitive side chains now that the technology is far better with L2s. It seems like Berachain also wants to go the sidechain route but you need to have a compelling story otherwise app developers will view these chains as liabilities by their bridge construction. For Gnosis and Polygon, I'm just not sure what that story is.

yeah, I agree with here. There has been lots of improvements in bridge construction in recent years. And I guess there has been some improvements on the Gnosis bridge as well. @koeppelmann.eth did mention the use of onchain ZK light-clients as signers on both sides of the bridge to improve it's security, which is definitely a lot better than a primitive multisig design.
