Made this morning. Stuffed round zucchini: 250 minced meat 2 small bell peppers finely chopped 1 shallot finely chopped 100g cottage cheese 4 breadcrumbs tablespoons 4 round zucchini Carve the zucchini. If too hard, pop them in oven for 10 min. Set the zucchini flesh aside. Cook meat, add salt and pepper to taste. Set aside. In same pan saute peppers and shallot. Add salt. Add zucchini and cook until there’s little liquid. Add cottage cheese, spices (whatever you got), and breadcrumbs. Stir till its a paste. Fill zucchini with mixture, pop in oven at 200c for about 25 min or until it looks good. Double the amounts and make it for the week, it lasts 3 days in the fridge. Perfect and healthy for lunch and dinner ❤️
