I'd like to use off the shelf docs stuff, but a lot of the options either change the hosting equation considerably, or worse (and more commonly), adds a bunch of tracking/analytics stuff I do not want to put on the site

Features: technical docs that are manageable via a multisig shared between core contributors of Quilibrium; co-owners can accept/reject public edit requests; version history; p2p storage

Very cool — you might want to check out our dev streams, because Q solves for some of the more painful parts of encrypted storage settlement and privacy with repudiability that aren't available without heavy engineering overhead on things like IPFS
