But that's only if your app allows a cold start (no assets needed, no gas fees, ...)

I've explored this in the past but didn't go forward beyond initial ideation - prob there's opportunity to explore with on-ramping via stripe or something

Cold start - yes. I think most products outside of defi should be okay with cold start. 
For gas fees, I’d recommend using services like ours (check bio). Fully gasless experience for users
