Ghormeh Sabzi is a traditional and popular Iranian dish made from a combination of aromatic herbs (parsley, cilantro, fenugreek, and chives), red meat (usually lamb), red or pinto beans, and dried limes (limoo amani). It is served with rice, and the sour and slightly bitter flavor of the dried limes, along with the fragrant herbs, makes it one of the most famous and beloved dishes in Iran. Ghormeh Sabzi is often completed with saffron and oil drizzled over the rice.
