Why do I always have a burst of creative energy right before I’m about to go to sleep… my mind always races and I suddenly have all these ideas of the things I can accomplish - where was this energy during the day??

It's actually not the worst moment in the day to have a rush of ideas. The brain will reinterpret your thoughts and orchestrate them overnight so you have the final product when you wake up! ðŸ§
