Is there really not an electric kettle that can be controlled in single digit increments and heat to lower temperatures like 85 or 90 degrees F? What am I missing here?

there are plenty, usually designed for making pourover coffee. a few examples: Brewista Artisan, Fellow Stagg, Hario Buono temp control kettle. just search “temperature control kettle,” though most are $40 slop so you need to do some digging.
