i’m not sure why so many vegan menus focus on fake omelettes and imitation meats, often made with questionable ingredients and ultimately disappointing. restaurants should focus on creating original, plant-based recipes that truly showcase the flavors of real ingredients—i’m sure people would appreciate that so much more.

Come to Portland! It’s the vegan mecca of the US. Plenty of restaurants making amazing vegan food without a bunch of processed, imitative ingredients (though admittedly, there’s a lot of that as well).
