aw i read a bit of the documentation and thought it said you could implement a separate bridge contract that interfaces with a regular erc20, but yeah without mint/burn functions that won't work.
would have to make a custom bridge that locks/wraps tokens and that kind of defeats the purpose of the new erc7802 stuff
