tbh having only started companies and not worked at a place with great engineers and culture, I kinda regret not having that network to hire from later, and not having the mental benchmarks from seeing a really great organization operate from the inside

I did that with Coinbase. Always planned to start my own company. If you end up at a company that grows quickly, a lot of opportunities to learn and work with talented people. Hard part is choosing / getting the job, though.

IMO theres no replacement to working at a good startup early on: - continually shipping stuff under constraints - learn new tech on the fly under pressure - absorb knowledge from veterans - adapt to user behavior - scaling (specially this)
