Italian food is so overrated. I like it, but Indian, Korean, and Tex-Mex flavors are much more interesting.

Agreed. Pasta at Italian restaurants is the same as something you can make at home. Indian, Korean, and Mexican takes more skill and thus is better at restaurants.

My take: Indian, Korean, and Tex-Mex rely on strong spices and provide a very different experience. Italian food is about simplicity and subtlety. Dishes tend to use the flavour of key ingredients rather than spices. Not saying one approach is better than the other. They’re just different philosophies.

Maybe hot-take: European protectionism of food and snobbery about “authentic” is damaging. Check reaction vids of some Italians tasting pasta/pizza experiments around the world. The holier-than-thou attitude is off-putting. IMHO what makes food interesting is making it as unique as the people making and eating
