Italian food is so overrated. I like it, but Indian, Korean, and Tex-Mex flavors are much more interesting.

European protectionism of food  and snobbery about “authentic” is damaging. Check reaction vids of some Italians tasting pasta/pizza experiments around the world. The holier-than-thou attitude is off-putting. 

IMHO what makes food interesting is making it as unique as the people making and eating
