Typically the flavours are more subtle and IMHO tastier.  This is a broth of sake/mirin/soy sauce, but you can also do dashi.

Chinese hot pot tends to have heavier, stronger flavours, including chili.  Of course it depends on the kind of Chinese hot pot.

Looks awesome. Is Japanese hot pot much different than Chinese hot pot?
