What is a good resource to learn, understand, and maintain a distributed system like Hubble, and to run production ready APIs?

Not the answer you’re looking for, but working with actual teams on real-world systems is the best teacher. There are resources which can discuss patterns in the abstract, but your product’s specific needs will always dictate priorities in the system you build, which trump any theory you’ve learned.

Any answer from you or team is the right answer. I have a hub up and running already and just trying to wrap my head around the things I believe keep failing. And was wondering if there was general stuff. If I’m understanding correctly, I should try to get more involved in Hubble repo? (I’m scared)

Thought you were asking more from the perspective of general production systems and less about hubs. Hubs are not “typical” systems given they are part of a decentralized system. Most texts would discuss operationalizing centralized systems. We don’t yet have a guide for “productionizing” a hub—we should.
