1/ If you want to cook with fat instead of oil for cheap, go to your local butcher and ask for any excess fat. They’ll probably give it to you for free. Grind the fat through a meat grinder and cook with onions and garlic (+ aromatics) until all the fat becomes liquid. Strain the liquid into a jar and let it cool.

2/ The fat will solidify as it cools. You can store it in the fridge, but I leave mine on the countertop all the time and it’s perfectly fine.
