If you've been to Bali before, what would you recommend doing and where would you recommend staying?

I think Ubud is awesome, but it is super packed as well. 
I was living in Uluwatu for 2 months this year and liked it there. Better prices, less packed, and think it has the best beaches in Bali.
If you're just there for a short time definitely most of your time in Ubud, but check out Uluwatu too.

any must-see places in Ubud?

I guess you know the usual things like Monkey forest, rice terrace etc.
I'd go to Mupu rice terrace instead of Tegalalang.
Also check out Kanto Lampo waterfall and some of the other waterfalls around that part they're really nice!
