Truths in crypto that seem to not be clear to many lately:
- You can trade tokens on mobile apps and not NFTs because digital collectibles (NFTs) are subject to the Apple tax and tokens are not.
- Coinbase isn't "bad at listing tokens". It's a regulatory issue.

Any idea why only NFTs are subject to the apple tax?

They are seen as digital items, so they are subject to the same Apple tax as audiobooks, ebooks, songs, etc.

Stocks, crypto, etc are not digital items, so are not subject to the tax (see Fidelity, Robinhood, etc).
