After the successful Detroit-style invasion and the nation (finally) learning about New Haven style, I was confident that LA would become saturated with various “made up” styles.

Either by restaurateurs or third party delivery app companies via ghost kitchens (but more about that another time).

I was fully expecting somebody to try to ride the Eno’s coattails and attempt a St. Louis style. 

Glad there is a New Haven style spot out in Glendale. 

All this to say, I am personally not against this idea “of making up styles” if it leads to more creativity in the kitchen.

So if you grew up in Tampa Bay and a certain cheese, sauce, topping, prep method, etc… feels unique to you - then go ahead. 

Authenticity and tradition are beautiful things, but everything in moderation. Except how much pizza I’m gonna eat this weekend. ￼

But I was wrong. There is no “Tampa Bay Style”. At least not now.

The only made up style I’ve tried is “Pittsburgh Style” at Gorilla Pies. And while they claim it’s authentic - an employee confided to me - “We just made it up.”
