And the answer is... bisque! 🦐 This was my third attempt at a shrimp shell broth and the first at a bisque. I roasted the shells for ~40 mins, and then boiled them for ~3 hours. The whole time it smelled very intensely of shrimp 😅 I strained the broth (which turned out intense in taste and brownish in colour), and then tried to use a food processor to turn the shells into a fine paste which is supposed to be the base of the bisque. Failed spectacularly because it was too weak for this job. But I shredded the shells anyway and strained the liquid, which tasted even better than the broth! So a win anyway. In the meantime I also boiled some veggies (onion, carrot, potato), puréed them with a blender and added that shrimp liquid along with some shrimp broth. The result was a very creamy, fishy, shrimpy soup which I would love to make again 🍲 Another successful case of food scraps reuse ✔️
