made mapo tofu (ish, added eggplant and tomatoes) with half doubanjiang (Chinese bean chili paste) subbed out for miso ==> milder / more umami mapo flavor imo

Eggplant and mapo tofu go really well together. There’s a Japanized Chinese dish called “Mapo Eggplant.” It’s a variation where eggplants are used as a substitute for tofu 🍆

Because I'm Japanese 🙂 If you have mentsuyu and udon noodles, you can simply boil chicken thighs and green onions in mentsuyu at the recommended concentration, then add udon noodles. It’s easy and delicious, so I often make it😆
