π Shchi β the soul of Russian cuisine! Todayβs table features fragrant shchi, perfect for warming up any day! What you need (for 4-5 servings): fresh cabbage β 400 g (or sauerkraut for a tangy twist), potatoes β 3-4 pcs, carrot β 1 pc, onion β 1 pc, beef or chicken β 400 g (on the bone for a rich broth), tomato paste β 1-2 tbsp, garlic β 2 cloves, bay leaves β 2 pcs, salt, pepper β to taste, sour cream and herbs β for serving. How to make it: cook the broth β cover the meat with 2-3 liters of water, bring to a boil, skim the foam, and simmer for 1-1.5 hours, chop potatoes into cubes, shred the cabbage, grate the carrot, finely chop the onion, add potatoes and cabbage to the broth and cook for 15-20 minutes, sautΓ© the onion and carrot, add tomato paste, simmer briefly, then add to the soup, 5 minutes before itβs done β toss in bay leaves, garlic, salt, and pepper, serve hot with sour cream and herbs!
