Feels like there’s been a shakeout in the chocolate industry. A decade ago I could’ve found bars from tons of artisan producers in a Whole Foods aisle; today I looked (had to buy some for an gift) and it’s been winnowed down to about 10, several of which have a nonprofit or diet niche focus. Definitely fewer now.
