I upped the hydration a bit and dough seemed better this time. Bottom crust still isn't quite browning like I want, think I might need to bite the bullet and go get a baking steel. 225g flour, 125g water, teaspoon sugar, teaspoon yeast, tablespoon butter and oil for the dough Of course gotta top with the hot honey
