Are there any Uniswap-esque DEX projects on Bitcoin that are building on runes? By this I mean - fully decentralised - trust minimized - fully automated - no order books - fully open source

Ordinals only exist thanks to centralized wallet clients that use arbitrary math to number satoshis. The whole thing has been one massive troll on the Bitcoin ecosystem larping as a revolutionary new asset class being "built on Bitcoin."

No they exist because people agree to follow a protocol, much like bitcoin itself

No, the two are very different. You don't "agree" on how Bitcoin works, you either accept it or don't use it. Unlike Bitcoin, ordinals are not inherent to any underlying consensus.

The "underlying consensus" is always subject to social consensus. If you can convince enough people to upgrade their nodes then it is possible for you to actually change the way bitcoin works Ordinals are just a way of interpreting bitcoin transactions, don’t see how the overarching consensus mechanism is different
