We used 1, but it ended up being a huge problem/PITA cross chain. The rest don't support all of the chains our protocol is on.

This rings true to my experience too. If you are at the bleeding edge of deployments you have to wait for infra like Safes, Fast bridges, UniV2, and Chainlink like Oracles to deploy to really see Defi bloom on a chain. Aave like money market also often required for lower friction txing.
