What’s the best way to increase VO2 Max? As someone who’s otherwise pretty healthy / fit, my VO2 is stuck in the “Below Average” range according to my Apple Watch. Curious what’s worked for others?

Keep in mind that the Apple Watch tends to underestimate the vo2max. It is very sensible to aerobic run and tends to “ignore” tempo run. For example when watch reported 51, other tools reported 58 in my case. Huge difference.
