Step 1 - beef bones First, buy them from an Asian grocery store and save money. Oxtail is good too, but it’s still missing marrow for that deep beef flavor I put all of these in a pot of cold/warm water and brought that to a rolling boil. Take it off the heat and wash the scum off the bones and add them to your Instant Pot

Step 2 - spices With the bones you’ll have one ginger, one yellow onion, and your spices. That includes (roughly): - a lot of coriander - 4 star anise - 12 cloves - 1-2 cinnamon sticks - 1 black cardamom pod These all go into the Instant Pot together filled to the brim with water (not hot). Use the Meat Stew setting for 1.5 hours

Step 3 - skim the fat After your broth is done cooking, you’ll want to remove the contents and stick the broth in the fridge. This lets the fat solidify at the top for you to remove. Helps enhance the beefy flavor
