Biggest problems is you need approvals to use stables and UX around it is very bad(Solana wins here big). There are companies making solutions for it(thirdweb, daimo, crossmint), but UX is still very sad, especially if you want easy fiat onboarding. Need something that is Stripe-like easy to use.
