C di palo - the sister wine bar next door to di palo which is a cheese / charcuterie shop w lots of imported stuff from Italy, family run for generations. wine bar is super lowkey.

A verification process could be nice as an add-on (not a blocker to profile creation) but I don’t see why this is any different from creating a polymarket bet on whether Jesse or Dan will have more followers on warpcast in 10 years. Neither Jesse nor Dan would have given consent to using their names, nor would they earn any of the trading volume on polymarket. Stack is an n-person reputation market instead of 2, and all of them get real $ value sent to them automatically.

For new restaurants w excellent wine programs - smithereens (EV) is the latest on my radar, but it’s white wine only (seafood focused menu). Nikita, the beverage side of the restaurant, loves riesling and comes from fine dining (she was the bev director at momofuku ko).

feels like there aren’t that many new wine bars opening these days, in the last year though maybe plus de vin (wb), lai rai (LES) for natural wines—compagnie flatiron, parcelle (chinatown) for more classic styles
