A great twist on this is to add honey, a lot of butter, and fresh rosemary once they’ve reached this point and keep frying them. The honey eventually crisps up around them and they almost become candied it’s amazing

I steamed them first

Then you want to crush em into a hot oiled pan, salt helps too. You’ll want them soft enough to squish easy, if they are harder they break more 😄

I’ve never made potatoes like this, but they look great. Any tips?
